Recipes with a Cause: Date-Sweetened Strawberry Lemonade (No refined sugar!)

The lemonade stand is up and running! We don’t know about you, but a fresh glass of lemonade on a warm summer day is where we want to be right now.

This week, Jasmine and Chris, of Sweet Simple Vegan, are bringing a fresh take on a classic, Strawberry Lemonade, minus the refined sugar. They are long-time friends of NTR and we’re so excited to have them in this series of vegan summer recipes.

We created this recipe with summer in mind and we think that is the perfect beverage for parties, picnics, or just a relaxing afternoon at home.

The best part is that this recipe requires just 4 simple ingredients:

  • Medjool dates

  • Lemons

  • Strawberries

  • Filtered water

Date-Sweetened Strawberry Lemonade

INGREDIENTS:

  • 3 cups filtered water

  • 1 cup (140g) diced strawberries

  • 1/4 cup (50g) Medjool dates* (see notes)

  • Juice of 2 lemons (about 1/4 cup or to taste; we used Meyer)

  • Optional: 2-3 sprigs of fresh mint

DIRECTIONS:

  1. In a high-speed blender, blend all of the ingredients together (except for the optional mint) until smooth, about 1-2 minutes.

  2. Transfer into an airtight container and add in the sprigs of mint if using. Seal and place into the refrigerator for 1 hour or until chilled.

  3. Serve over ice.

NOTES: 

If your dates are not soft, soak them in hot water for about 20 minutes or until softened, and drain before use. 

Add more dates if you want the lemonade sweeter!
